The Cookery

“Ain’t She Sweet?” and “Stardust” were some of the sounds heard at the Second Wind gathering on February 10. Forties Four’s Big Band Sounds—Faith Church’s own celebrities were on hand with their musical talents.

They are Don Miller, piano; Jim Powell, trumpet; Roy Ailstock, drums and Red Force, clarinet. Thank you fellows—it was wonderful—we even saw some dancing and toe-tapping.

February 7, the Cookery served a ham dinner to 250 friends and family of Steve Loy following his funeral.

2003 new members were welcomed into Faith Church with a dinner on February 15 in Robinson Hall.

Once again thank you to all who helped and served. It is all of you who make the Cookery operate.

The Cookery would like to thank Candy Ziegler for the black server’s aprons. Our dining room hostesses wore them for two events and looked very spiffy.

I acquired the recipe of the month from Ellen Hendrix who has since moved to Franklin, Tennessee. Ellen was the faithful Second Wind cook for several years. We served this to Second Wind in February along with meatballs. It is a nice cold winter day dish.

Our Recipe of the Month

Reunion Pasta

6 cups pasta sauce (homemade or purchased, thinned with 1 cup of water)

1 pound ziti or penne, cooked al dente

1 pound ricotta cheese

2 eggs

1/4 cup grated Romano or Parmesan cheese

1/2 pound grated mozzarella cheese

Salt and pepper to taste

Preheat oven to 350 degrees.

Mix together cheeses and eggs. In baking dish layer sauce, ziti and cheeses until all is used. Be sure to finish with sauce.

Cover with parchment paper and bake 40 minutes, uncover, sprinkle with some mozzarella cheese and return to oven for 5-10 minutes just to melt cheese.

Sometimes I add a box of chopped spinach, well drained, to the cheese mixture.

This is a large recipe so a lasagna pan works well.
