6 cups pasta sauce (homemade or purchased, thinned with 1 cup of
water)
1 pound ziti or penne, cooked al dente
1 pound ricotta cheese
2 eggs
1/4 cup grated Romano or Parmesan cheese
1/2 pound grated mozzarella cheese
Salt and pepper to taste
Preheat oven to 350 degrees.
Mix together cheeses and eggs. In baking dish layer sauce, ziti
and cheeses until all is used. Be sure to finish with sauce.
Cover with parchment paper and bake 40 minutes, uncover, sprinkle
with some mozzarella cheese and return to oven for 5-10 minutes just
to melt cheese.
Sometimes I add a box of chopped spinach, well drained, to the
cheese mixture.
This is a large recipe so a lasagna pan works well.
